Many cultures have their own version of apple cake. Growing up, apple cake was made up of a total of seven ingredients. The cake was good. But now that I’ve tried many other types of apple cake, I realize that the apple cake that my grandma made lacked depth. If she makes it, I’ll still absolutely eat it. It tastes delicious. But I would prefer to make this new recipe I found.
When I moved from the USA to the Netherlands in 2018, I learned that apple cake can be something really different. Apple cake is filled to the brim with apples and accompanied by loads of whipped cream. We rarely had whipped cream growing up. Whatever your favorite apple cake is, I’m sure you’ll find this apple cake as delicious as I found it.
- 1 ½ cups of flour
- 2 teaspoons baking powder
- ½ teaspoon baking soda
- ¾ cup white sugar
- 1 or 2 large apples (depends on your preference)
- 2 large eggs
- 1 teaspoon vanilla extract
- ½ cup oil
- ½ cup Greek yogurt
- ¼ cup brown sugar
- 2 teaspoons ground cinnamon
- Some melted butter
- ¼ cup powdered sugar
- Some milk
- Preheat the oven to 180C or 350F
- Grease a baking pan or line it with baking paper
- Mix flour, baking powder, baking soda, and sugar in a big bowl.
- Add in eggs, vanilla, oil, and yogurt.
- Slowly mix in apples. Don’t use an electric mixer as the mixer will break up the apples.
- Add the batter to the cake pan.
- Make the topping by mixing together the brown sugar, cinnamon, and butter.
- Sprinkle the topping on top of the batter in the pan.
- Bake the cake in the oven for 35 minutes or until your toothpick comes out clean.
- Add the powdered sugar and milk to make the glaze. The glaze should be creamy and not too liquidly.
- Add the glaze on top of the cake when the cake is mostly cooled down.
Dig in and enjoy this scrumptious cake. My partner Kevin took the cake to work, and there was not a drop left.
