My Grandmother’s Apple Cake

For as long as I can remember, whenever my grandmother was visiting from Moscow, she would make her apple cake for my family. It’s very few ingredients and absolutely finger-licking good. Given that my family couldn’t afford fancy ingredients, apple cake was something that we could always make. I still make this recipe to this day, and so do many of my family members. Family recipes are meant to be made and shared for generations.

The Batter

  1. 1 cup flour
  2. 1 cup sugar
  3. 1 teaspoon baking powder
  4. 3 eggs
  5. A few tablespoons of oil (I always add as needed)
  6. Powdered Sugar (To add on top, optional) 
  7. Apples

Method

Start with preheating the oven to 350F (177C). 

Grease the pan with oil or butter. Peel 3 or 4 apples depending on their size. Chop them up and put them on the bottom of the pan.

Mix all ingredients together until smooth. Pour the batter over the apples. Don’t worry if the batter doesn’t cover the apples because it’ll rise in the oven. 

Bake for 35-50 depending on the size of the pan. When the toothpick/fork is clean, the cake is ready.

Flip the cake over on a plate and eat the fruits of your labor. 

If you can’t finish the cake, stick it in the freezer and defrost when you want some more sweetness.
