
I’m one of those people that make a ton of food when I invite people over. I’m always worried that someone will go hungry. For the Thanksgiving meal dessert, I made a coffee cake, but I thought it wouldn’t be enough, even though I also had a bunch of chocolates. So I decided to make another quick dessert, peanut butter cookies. I grew up eating these all the time because they are super easy to make and inexpensive. I used this recipe as inspiration but went my own way with it. Here is how I made these delicious cookies.
Ingredients
- 3/4 cup / 96g of sugar
- 2 eggs
- 1 cup / 227g of peanut butter
- a sprinkle of flour
Method
Preheat the oven to 350F (175C).
Mix the sugar, eggs, peanut butter, and flour together.

With a spoon, scoop up some of the mixture and put the ball on the baking sheet. Do this until there is no more of the mixture.

With a wet fork, press down on the batter ball. Do that again the opposite way.

Bake for no more than 8 minutes.
These cookies are delicious by themselves or a steaming hot cup of tea. Enjoy them!

What are some things that you like to make with peanut butter?
Can you use either natural peanut butter or the kind we had back in the ’60s? I grew up with the latter but for years I use the natural style which separates at room temp.
I think any kind of butter will work. Any kind of peanut butter, almond butter, cashew butter, etc. Let me know how it turns out!
