
Salmon is one of my favorite foods to eat. I could eat it every day. In fact, when my partner Kevin and I went to Norway, most hotels we went to served smoked salmon for breakfast. And boy did we indulge. Like how can one turn down a free smoked salmon breakfast? I didn’t eat much salmon growing up because it’s very expensive.
Growing up in a family of 15 kids, eating salmon often just wasn’t possible. But when I was a teenager, I went into foster care. My foster parents were in a better financial place than my biological parents were. So salmon was eaten more often. My sister who lived with me would make this delicious salmon salad, and it’s only 3 ingredients! This salad is absolutely delicious on toast.
For the first time in years, I decided to try making this salad myself. Salmon is still something that is not often found in my home. So eating this was a treat. I’m definitely going to try to remember to make this at least a few times a year. Kevin tried it for the first time as well and really enjoyed it. So here’s the recipe:
Ingredients
- 2 filets of smoked (baked) salmon
- 1 spring of green onion
- 1 large spoonful of mayonnaise
Method
- Chop up the green onion in small pieces
- Smush (shred) up the salmon
- Add mayo and mix
And that’s it! You can add some salt, black pepper, and dill if you’d like, but it’s pretty good without it as well.
