Something From Nothing Salad

I’m not much of a recipe follower. I like creating things on my own, especially when it comes to food. Some days, I just don’t feel like cooking so I throw together something from nothing. That’s what my mother always called it. Use what you have and hope it tastes good. Most of the time it does. Except when I decided to buy frozen salmon, because it was cheap, and mix it with spaghetti, soy sauce, and veggies. That didn’t turn out so good.

This salad tasted pretty good. It was a hot day, and without air conditioning, I was in no mood to cook. I had some veggies and other odds and ends. I threw them together, and voilà, dinner was served.

The recipe goes as follows, but feel free to throw in whatever you have or leave out whatever ingredients you don’t have.

Ingredients

  • Edamame (leftover from my sushi dinner the night before)
  • Runder rookworst (any type of salami will do)
  • Cucumber
  • Tomato
  • Red bell pepper
  • Roasted bell pepper
  • Marinated garlic
  • Sun-dried tomato
  • Garbanzo beans
  • Salt
  • Pepper
  • Oil (I usually use sunflower or olive oils)
Kikker erwten is Dutch for garbanzo beans.
Runder kookworst is cooked sausage made out of beef.

Method

Chop up all the ingredients, mix them together in a bowl, and you’re done!

I always try to use whatever I have extra or leftover. That way nothing ever goes to waste. This is my something from nothing salad.
