Vegan Butternut Squash Soup

Butternut squash is an orange squash that grows on a vine. It’s a delicious squash, flavored of nuts, and some sweetness. I don’t use it much as it’s not my favorite. When I do use it, I use butternut squash to make soup. Soup is my favorite way of using squash. I’m not a vegan, but vegan butternut squash soup is one of my favorite soups. I grew up making it with my family. We had it very often. It’s a quick and easy recipe, made of only 6 ingredients.

Ingredients

  1. Butternut squash
  2. Onions
  3. Salt 
  4. Pepper
  5. Water (for boiling)
  6. Oil (for frying)

Instructions

Peel, clean and cut the butternut squash in large cubes. Put them in water and boil until soft. Meanwhile, cut up a few onions and fry them up in oil. Make sure not to fry the onions too long or the soup will turn brown as mine did in this photo.

When the butternut squash is soft and the onions are fried, put both into a blender. Add salt and pepper as needed to your liking. 

Add hot water as needed (the water you boiled the squash in). Add as little water as possible. You don’t want to water down the flavor of the butternut squash and onions. Blend until smooth, like an applesauce consistency. 

Dig in and enjoy while it’s still hot.
