An Egg on a Bed of Salad

I love eating something super filling and hot for lunch, but I don’t like making a whole fuss. Whenever I don’t have leftovers to eat, my go-to lunch is eggs. They are filling, nutritious and so easy to make. And most importantly, they are relatively inexpensive. Usually, I put some kind of veggie or bread with the egg to make it more filling. This is something that I make at least once a week, if not more. Here is how to make this quick and easy lunch.

The Egg

Heat up some oil in a pan. When the oil is hot, drop an egg or two into the pan. Add some spices like salt and pepper. Cover the egg. Cook for a few minutes until done.

The Salad

Chop up some tomatoes, cucumbers, lettuce, dill, and bell peppers. Mix the veggies and dill with some salt, pepper and olive oil.

Bring Everything Together

Spoon the salad onto a plate. Add the fried egg on top. Dig in and enjoy! How easy was that?!
